Cotechino (pork sausage stuffed in casing) is prepared by mincing the pork meat in a mincer. Trimming can be performed before this process, when required.
The mixture thus obtained is stuffed into a casing and then packed in aluminum bags. T
he product is then precooked under vacuum or at atmospheric pressure.
Cotechino 100% Italian Meat is produced following the traditional 1907 recipe, with a sesoning based on spices, wine, garlic, pepper and salt.
